Banjarmasin, S Kalimantan May 24 (AntaranewsKalsel) - Culinary specialties of Banjar, bingka cake, which mostly sought during the fasting month, is now reportedly often taken to neighboring countries, such as Brunei Darussalam and Malaysia.


H. Ruspandi or called H. Dodong, a manager of the Bingka Production House of H. Thambrin brand in Banjarmasin, said Thursday that the bingka cake he produced is not only interested by locals but has been brought to various parts of the country even to Brunei and Malaysia.

"Some time ago there were people who bought a bunch of cakes brought to Brunei, because their family there ordered to taste the delicious cake which made by baking," he said.

Bingka H. Thambrin Production House which has been operating since 2003 in Ramadhan produces more bingka than ordinary days.

According to Dodong, since the beginning of this year's fasting month, the production amount daily is 1,000 to 1,300 with its unit price of Rp42,000 or an increase of about Rp1,000 compared to last year.

With that amount of production, the Bingka H. Thambrin House of Production which issued three variants flavor, namely the original potatoes, cheese potatoes, and tapai potatoes, every day has a turnover Rp42 million to Rp56 million.

"Despite having three variants of flavor, but the original taste of potatoes still seems to be the people's favorite choice, so we produce more nearly 70 percent of the total production," Dodong said.

In addition to being sold directly at the processing plant at Jalan Sultan Adam Banjarmasin, bingka H. Thambrin can be bought at several outlets opened by resellers, including in the Ramadhan Cake Fair managed by Banjarmasin municipal government.
 
After more than 15 years of production, now Bingka H. Thambrin Production House hires 30 local workers with working hours every day from 02.00 to 12.00. It has 13 pieces of large-size baking equipment each can produce 12 to 20 bingka for each time baking.

By producing 1,000 to 1,300 bingka then everyday Bingka H. Thambrin Production House spent 300-500 kilograms of coconut milk, 3000 - 5,000 duck eggs and seven bags of potatoes as the main ingredient.
